Chicken Alfredo Tortellini Soup

Steps

  1. In a large pot over medium high heat, melt the butter. Add the onion, carrots, and broccoli and saute, stirring, until softened, 3-4 minutes.

  2. Add the garlic and cook until fragrant, about 20 seconds.

  3. Stir in the garlic powder, Italian seasoning, kosher salt, black pepper, and crushed red pepper flakes.

  4. Reduce the heat to medium low, add the flour, and whisk until dissolved and cooked off.

  5. Very gradually add the heavy cream, whisking constantly until no lumps or flour remain, then whisk in the chicken broth.

  6. Increase the heat and bring to a gentle simmer, whisking occasionally, until the soup thickens, 5-8 minutes.

  7. Add the tortellini and cook until al dente, 5-7 minutes.

  8. Remove the pot from the heat. Stir in the cheese until melted, then stir in the cooked chicken.

  9. Taste and adjust the seasoning if necessary.

  10. Ladle into bowls with a sprinkle of freshly shaved parmesan and serve.
