Salad
Chop all of the ingredients (unless they are already small) and put them in a large bowl.
Dressing
Put all the dressing ingredients in a jar and shake it up, tasting as you go before adding extras.
Pour the dressing over the chopped ingredients and mix it all together.
Notes & tips
- Most of this is measured with your heart. All of the ingredients can be added to, taken out, or have the quantity changed based on what you want.
- The original recipe also has 1 can of pinto beans and 1 can of olives, but Riley doesn't like those.
- For the dressing, just go off the vibes. Start with the original recipe, then usually add extra lime, taco seasoning, and hot honey for more flavor.
- Go easy on the sugar because the heavy syrup from the peaches goes in too. Add the vinegar slowly, since it can be a little too much. The sugar and syrup help when you overdo it.
- Great as a salsa dip with tortilla chips, and also great on Mexican rice bowls, breakfast burritos, burgers, salads, or whatever else you want.
- Also great with avocado on top, but it is not one of the ingredients, to avoid it getting brown and mushy.
