Egg Roll in a Bowl

Ground pork and coleslaw mix cooked in a soy, sriracha, and ginger sauce, served on its own or over rice.

Steps
Add the sauce ingredients to a bowl and whisk together.
Add the oil and pork to a large skillet over medium high heat.
Cook the pork, breaking it up with your spoon as you go along, until it is no longer pink (about 6 minutes).
Pour the sauce into the skillet and stir to coat the pork.
Add the coleslaw mix and cook, tossing often (it is easiest with tongs), until the cabbage is tender crisp and the pork is cooked through (about 4-5 minutes).
Stir in the scallions.
Serve immediately with a drizzle of hoisin sauce and/or extra sriracha sauce.
Notes & tips
- This dish is delicious by itself or served over rice. If you serve this with rice or noodles, it easily serves 4 people. Without rice or noodles, it will more realistically make 2-3 portions.
- Toasted sesame oil is the dark sesame oil you can find in the Asian section of most grocery stores (hoisin sauce and sriracha sauce usually can be found there too). It is sometimes just labeled as sesame oil or pure sesame oil.
- Ginger is much easier to grate when frozen.
