Homemade Chicken Noodle Soup

Chicken noodle soup with broth made from a whole rotisserie chicken, red potatoes, carrots, and homemade noodles.

Steps

  1. Place the whole rotisserie chicken in a large soup pot and cover with water.

  2. Bring to a boil, then turn the heat down and simmer for 1-2 hours to make broth.

  3. When done, pull the chicken out and put it on a cutting board to cool.

  4. If the chicken was cut or separated during cooking, pull out all the large pieces, then strain the broth into a large bowl through cheesecloth or a strainer with small holes.

  5. Put the broth back in the pot and leave the chicken on the cutting board.

  6. Cut the potatoes, carrots, celery, and onion and place them in the pot with the broth.

  7. Bring back to a boil and add all the seasonings to taste. Depending on how the chicken was seasoned and whether you add bouillon, you may not need more than 1/2 teaspoon of salt.

  8. While the vegetables cook, make the homemade noodles (see Homemade Noodles).

  9. Let the noodles dry while you separate the chicken from the bones into bite-sized pieces. Add the chicken to the broth and vegetables as you go.

  10. Cook for at least 30 minutes, then add the noodles to the broth.

  11. Cook for 20 more minutes.

  12. Add the peas and corn. It is ready to serve immediately.

Homemade Noodles

  1. Mix the egg, milk, and salt in a small bowl with a fork.

  2. Add enough flour to make a stiff dough.

  3. Roll the dough out on a cutting board or floured surface to the desired thickness, using lots of flour so the dough does not stick.

  4. Let the dough sit for about 20 minutes.

  5. Use a sharp knife or pizza cutter to cut strips about 1/4 inch wide.

  6. Cut the strips into smaller pieces.

Notes & tips

  • Can be served with french bread.
  • Double the noodle recipe when making a large pot of soup.
