Lemon Lush

A layered dessert of shortbread-style crust, sweetened cream cheese, lemon pudding, and whipped topping.

Crust
Preheat the oven to 350°F.
In a medium bowl, combine the flour and butter using a pastry cutter until a ball forms.
Press into the bottom of a 9x13 baking dish.
Bake for 25 minutes, then allow to cool completely.
Cream cheese layer
In a medium bowl, beat the cream cheese and sugar together until smooth and well blended.
Spread evenly over the cooled crust.
Lemon layer
In another bowl, whisk together the lemon pudding mix and milk for 3-5 minutes.
If you like the flavor a little more lemony, this is when to add the 1-2 Tbsp lemon juice.
Spread over the cream cheese layer.
Chill until set.
Topping
Top with the whipped cream and serve.
Notes & tips
- Without the added lemon juice it is a very mild taste of lemon.
