A doctored cake mix batter that makes rounds, cupcakes, or a 13x9 cake and works with any flavor.

Steps

Mix all ingredients in a bowl and whip for 2-3 minutes.
Pour into the pan.
Bake at 350°F for 27+ minutes.
Notes & tips
- Reduce the water to 3/4 cup - 1 cup if the cake center isn't baking fast enough or the top is too sticky.
- Makes 2 8" rounds, 24+ cupcakes, or 1 overfilled 13x9.
- For special flavors like lemon or coconut, use flavor extract, lemon zest, coconut shavings, food coloring, etc.
- If you want to use fruit puree, leave out the water.
- If using chocolate cake mix, add extra cocoa powder (1/4 - 1/2 cup).
