Simple Salmon Chowder

Steps

  1. In a large heavy soup pot, saute the olive oil, onion, red pepper, and garlic on medium heat until softened.

  2. Add the chicken broth, dill weed, and hot sauce. Bring to a boil, then cook for 10 minutes on medium heat.

  3. Add the salmon, peas, parsley, rice, milk, tamari, Dijon mustard, milk and cornstarch paste, and salt and pepper.

  4. Stir gently on medium high heat so you do not break up the chunks of salmon. Stir constantly until the soup thickens, about 2-3 minutes.

  5. Add the tomato and parmesan and stir until just warmed.

  6. Serve with crusty bread.

Notes & tips

  • Use a roma tomato: they have fewer seeds and are more meaty.
  • You can add other vegetables like asparagus, or whatever you want.
