Tater Tot Chicken Pot Pie

Steps

  1. Preheat the oven to 425°F and lightly grease a 9x13 inch baking dish.

  2. In a large, deep skillet or dutch oven, melt the butter.

  3. Add the onions and cook until tender, 3-5 minutes.

  4. Stir in the flour and cook a few minutes more.

  5. Slowly whisk the half and half into the pan, followed by the chicken broth.

  6. Bring to a simmer, whisking constantly, until the mixture is thickened.

  7. Stir in the thyme, onion powder, garlic powder, paprika, and salt and pepper to taste.

  8. Stir in the cooked chicken, peas, carrots, and corn.

  9. Stir in the cheese and cook and stir until the cheese is melted.

  10. Pour the chicken mixture into the prepared baking dish.

  11. Arrange the frozen tater tots in a single layer on top of the chicken filling.

  12. Bake for 25-30 minutes, or until the filling is bubbly and the tater tots are golden brown.

  13. Let stand for 5-10 minutes before serving.

  14. Garnish with fresh parsley, if desired.
